For Strawberry Puree

  • 1 1/2 cups cold filtered water
  • 1 cup raw cane sugar (can substitute with white granulated sugar)
  • 2 cups fresh strawberry, washed and hulled

For Strawberry Matcha Latte

  • 1 1/2 tsp matcha powder
  • 3 1/2 tbsp filtered water, heated to 170F
  • 3oz (1/4 cup + 2 tbsp) strawberry puree
  • 8oz (by weight) ice cubes
  • 3/4 cup milk (Oat, Cows or Almond milk)


The first step is to make a strawberry puree. In a blender, combine strawberries, sugar, and water, and blend until the mixture is pureed but still has some chunks. For the strawberry matcha latte, you will need only 1/3 cup of strawberries puree from this recipe. 

Let the strawberry puree chill in the refrigerator for about an hour before using it to allow the strawberry sweetness to develop. Combine the matcha powder with one tablespoon of hot water in a bowl. Stir vigorously until the mixture resembles a paste. This should be a thick paste. 

Whisk vigorously until the remaining clumps disappear, adding the remaining 21/2 tbsp of hot water. Simply pour your strawberry puree into your tall glass. Pour in your milk and ice next. 

The milk should drip down slowly to your strawberry puree as you pour it over the ice cubes. Do not pour too quickly or directly into the glass. By doing this, you will be able to maintain separate layers between the milk and the puree.

To separate the layers, carefully pour your matcha over the ice milk to cover the ice cubes. Enjoy right away!
